SHOPPING LIST: 2 Crü zucchinis, 1 leek, 1 potato, 2 carrots, 200 ml vegetable stock, 100 ml oat cooking cream, EVOO, salt, pepper and nutmeg.
STEPS:
👉🏽 Chop the Crü and brown with the leek, 2 carrots and garlic in a pot with oil.
👉🏽 Add the vegetable stock, cooking cream and stir until the Crü is soft.
👉🏽 Blend everything until you get a smooth creamy texture, add salt and pepper to taste, and enjoy 😇 If you add some crunchy carrot, it’ll blow your mind 😉
