SHOPPING LIST: 2 Crü zucchinis, 1 small Italian green bell pepper, ½ spring onion, ½ cucumber, ½ clove garlic, 2 thin slices of stale bread without the crust, 1 tbsp. vinegar, EVOO, salt, 2 hard boiled eggs and cherry tomatoes for garnish.


STEPS:


👉🏽 Chop the Crü, onion, bell pepper, stale bread and garlic; add a little vinegar and EVOO and blitz in a blender until you get a gazpacho texture. If it’s too thick, add a little water.  


👉🏽 Add the boiled egg and cherry tomatoes to give it that special touch, plus a little olive oil, and enjoy the freshness.
